Mid Autumn Festival- Golden Custard Mini Mooncake
Mid Autumn Festival is as important as other festivals and events such as birthday, x-mas and new year; all happen once a year, for that reason we must have a celebration ^^, let's preper some foods and of cause Moon Cake will be on the top of our list.
Although moon cake is no tquite a ' health' thng to eat as it contain too much sugar and other fat (1/4 moon cake = 1 bowl of rice) but still, moon cake is a 'must eat' item for mid autumn featival and why not make it yourself? (Yon can always reduce the amount of sugar or other ingredients for personal needs and taste)

Ingredients:
30g custard powder
20g milk powder
50g sugar
80mL coconut milk
25g condensed milk
1 eggs
15g butter
3 salty egg yolks
Dough Ingredient
230g all-purpose flour
160g golden syrup
70g butter
¼ tsp alkaline water
1 egg wash

Direction:
1. Melt the butter.
2. In the mixing bowl, beat the egg and combine coconut milk, condensed milk, custard powder, milk powder, sugar and mix well. Make sure whisk until no more lumps.
3. Then add the melted butter and mix well.
4. In the flattered plate, pour the custard mixture and steam it for about 7-8 minutes until fully cooked.
5. Let the custard cool down and place in the fridge for 3-5 minutes.
6. Place the custard on the flat surface then knead until the custard turn smooth. Divided the custard into 12 equal portion for the filling.
7. To prepare mooncake skin, combine golden syrup with melted butter and alkaline water. Add flour and knead until smooth.
8. Divide dough into 12 equal portion and roll into small balls. Cut the salty egg into 4 pieces.
9. Flatten dough with your palm, and fill dough with custard filling and egg yolk. Roll into a ball and place into mooncake mold. Press mold gently to form a pattern and place onto baking tray.
10. Spray a thin layer of water on top of mooncake before baked.
11. Preheat the oven to 190°C oven and bake for 3 minutes, then brush the mooncake with the egg wash, bake for another 3 minutes until golden brown.
12. Ready to serve.
