Chinese cold noodles in peanut sauce

This is one of the most famous and tasty traditional cuisine, with few ingredients and sauces, it is ready to be served
Ingredients:
- 1 pack of clear noodles
- Few pieces of chicken (can be chicken breast/ leg/ wing, breast will be a healthier option)
- 1 small Japanese cucumbers (Japanese cucumber has a sweeter tast)
Peanut sauce
- 3 tablespoons of peanut butter
- 1 tablespoon of soy sauce
- 1/2 teaspoon of sugar
- A dash of salt
- 1 teaspoon of sesame oil
- 1 tablespoon of water
Chicken marinade
- 2 tablespoons of soy sauce
- 1 tablespoon of Chinese wine
- Salt and pepper
Instructions:
Basic Preparations
Marinate the chicken for 30 minutes
Wash and peel the cucumber, cut into thin slices
Make the Peanut Sauce but combining the ingredient in a small bowl and mix well. The peanut butter can be thick and tough to mix. Add some water to help it soften up.
Cooking Procedures
In a small pot, bring some water to a boil. Add the clear noodles and cook for 2-3 minutes until translucent. Remove from water. Rinse under cold noodle and set aside.
In a frying pan, heat up and grill the chicken breast until thoroughly cooked. Remove from pan. Let them cool and shredded them up with your hands. Set aside.
To assemble this dish, place the clear noodles on the bottom of the plate. Top with some cucumber slices and chicken breasts. Finally, top with generous portion of the peanut sauce.
