Red Dates Cake with Lotus Seeds
It is traditional to have Chinese New Year cakes such as radish cake (turnip cake) and ‘Nian gao’ during Lunar New Year. You may try this ‘Red Dates Cake with Lotus Seeds’ recipes and add this to your Chinese New Year dinning menu.
Ingredients:
Red dates 25
Dry Lotus Seeds 80 g
Flour
Glutinous rice flour 100 g
Condensed Milk 20 ml
Direction:
1) Soak the red dates for 15 minutes. Drain dry and coarsely chop the red dates.
2) Soak the lotus seeds in water for 15 minutes, steam over water on high heat for 20 minutes.
3) Keep 12 of the lotus seeds whole for topping. Mash the remaining lotus seeds with a spoon.
4) In a bowl, combine glutinous rice flour and flour. Add coarsely chopped red dates, lotus seed paste, and condensed milk. Mix well.
5) With your hands, form the dough into 2-cm wide balls.
6) Arrange on serving plate. Top each on with a lotus seed.
7) Steam over water on high heat for 20 minutes.
